Regulations and guidance around how to inform the consumer about allergens have seen a number of changes in recent years, and it can prove hard to keep up with what the right and legal approach is. Whether you are considering using precautionary allergen labelling or making a ‘free-from’ claim, there needs to be sufficient evidence to demonstrate that it is the right choice to use on your label. Performing a thorough risk assessment along with validating the control measures put in place to manage the risks identified, will provide that evidence.
