Allergy
conference for the food industry
The 2nd Fresenius Conference,
on food allergens, was held at Darmstadt, near Frankfurt,
Germany, on June 13-14. The speakers included some of the
world's foremost experts on food allergy from the UK, USA
and Europe.
The subjects discussed include; threshold levels in food
allergy, quantitative methods for allergenic food risk assessment,
current status of the U.S. legal situation, directive 2003/89/EC
and practical implications, analytical methods for the detection
and quantification of allergenic food components, and labelling
of allergens.
