Food allergy is real for many people - it's not just a fad. Food allergy can be serious. Occasionally it can kill.

Around half a million people throughout the UK suffer severe allergic reactions to food, including about 250,000 young children with peanut allergy. Other common causes include shellfish, fish, egg, milk, wheat, soya, kiwi fruit and sesame seeds.

Those working in catering generally comprehend how serious food allergy can be but need more information, to ensure that risks are minimised in practice.

Keep everyone informed when substituting one ingredient for another e.g. if you switch from almonds to peanuts when preparing curry, ensure all staff are aware and that the change is communicated to the customer.
